MICROWAVE VEGETARIAN SPINACH BAKE

1 pkg. frozen chopped spinach 1 med. onion, sliced 1 Tbsp. margarine 4 slices bread, cubed 1 to 2 C. cheese, shredded 1/2 C. sour cream 1/2 C. milk 2 eggs, beaten 1/4 tsp. salt 1/4 tsp. Italian seasoning 1/4 tsp. pepper 1 med. tomato, chopped if desired
Unwrap spinach and place in 8 inch square microwave safe baking dish. Add onion and margarine. Cover with vented plastic wrap. Microwave (high) 5 to 6 minutes or until spinach is thawed. Add bread cubes, cheese, sour cream, milk, eggs, and seasoning; mix well. Cover. Microwave (medium to high 70%) 4 1/2 to 5 minutes or until edges begin to set, rotating dish once. Stir to move cooked portion to the center, cover and Microwave (medium to high 70%) 6 to 8 minutes or until center is about set. Sprinkle tomato over top. Let stand covered 5 minutes before cutting into squares for serving.
