2 C. raisins
1 C. unsweetened applesauce
2 eggs
2 Tbsp. liquid sweetener
3/4 C. vegetable oil
1 tsp. baking soda
2 C. flour
1/2 tsp. cinnamon
1 tsp. vanilla
1 C. chopped nuts |

Over low heat cook the raisins and 2 C. water until plump and tender. Drain and cool to lukewarm. Combine raisins, applesauce, beaten eggs, sweetener and oil; mix well. Mix soda, cinnamon and flour together, and then add to the raisin mixture. Add vanilla and nuts; mix well. Pour in a greased and floured tube pan. Bake at 350 degrees F. for 35 to 40 minutes, or until done by toothpick test. |
