BUTTERMILK CHOCOLATE CAKE
Cake
2 C. flour 2 C. sugar 1 C. water 1/2 C. shortening 1 stick margarine 4 Tbsp. cocoa 1 tsp. milk 2 eggs 1 tsp. baking soda 1/2 C. buttermilk Icing: 1/3 C. sweet milk 3-1/2 Tbsp. cocoa 1 stick margarine 1 C. chopped nuts 1 box powdered sugar 1 tsp. vanilla
Cake: Sift flour and sugar. In saucepan, mix water, shortening, margarine, vanilla, and cocoa and bring to a boil (stir often). Pour over flour/sugar mixture. Mix eggs, baking soda, and buttermilk together in a separate bowl and add to chocolate mixture. Pour into greased and floured 13 x 9 x 2-inch pan. Bake at 400 degrees for approximately 25 minutes. Icing: In a saucepan, combine sweet milk, cocoa, and margarine and bring to a boil. Add 1 box powdered sugar and vanilla gradually; mix well. Add pecans and mix with icing. Pour and spread over hot cake A really moist cake!
